I want S'more!

I'm pretty obsessed with American snacks and devastated that Twinkies are not in production anymore! But they can never stop S'mores! If you don't know what they are, its usually a camp fire treat where you squish a toasted marshmallow between two biscuits and some chocolate. Here's my take on a cupcake - S'more fusion. You'll probably want to pick up an exercise DVD when you get the ingredients too. 


Okay this one is pretty complicated and took me about 2 hours to complete. But the detail is worth it, each different textured layer just taste amazing. I'm not bragging, they're just good! Although, you'll probably wouldn't go to pick up another straight away because they're pretty rich. But give me a few hours ;) I'll take one with tea please.

Recipe:
Base
100g biscuit crumbs
2 1/2 tablespoons butter (melted)
1 tablespoon white sugar
- Mix all together until evenly coated. Press down in cupcake cases bake at 170 degrees for 7 minutes.

Sponge
I used a simple chocolate cake recipe you can find anywhere online. But before I spooned each serving into the cups, I topped the base with a spoon of gooey nutella.

Marshmallow
2 egg whites
100g white sugar
-Using a Bain Marie, whisk egg whites and sugar until the mixture is warm to the touch and sugar has dissolved completely. This should take 4 minutes, on medium heat.
- Take off heat and transfer to a cold mixing bowl. Again using an electric mixer beat for a further 5-8 minutes until stiff peaks form.
-Pipe over cakes (usually you should wait for them to cool. But I didn't bother) I used a simple open circle tip.
-You can either using a cooks blowtorch for a few seconds or under the grill, but you'd need to watch extremely carefully as they burn very easily.
-Dribble some melted nutella on one side, sprinkle biscuits, add a section of chocolate to decorate.
